The victory leaves the Knights firmly entrenched at the top of the competition ladder with a 7-0 win-loss record.
Launceston claimed their first win of the season heading into the Christmas break defeating Latrobe in their match.
The Lions restricted the Demons to 7-81, with wickets to Maddie Hickman, Kristy Clayton, Victoria Geale and Rachel Chivas and some great run outs by keeper Maddy Chick.

The coastal side made 9-100 batting first with Sam Cotton top scoring with 28.
Captain Sophie Parkin picked up excellent figures of 4-14, off four overs, Katie Broad 2-25 and Bec Dowe 2-16, with a great catch from Ianthe Boden.
The Blues then chased down the runs in the 15th over in an unbeaten partnership with Boden top scoring on 60 and Dowe with 26.
Mowbray went down to Burnie in their game.
South's Caitlyn Webster is set for a big hit in her total of 52. The Eagles scored 6-111, batting first with opener Lynn Hendley the standout with 51 not out.
Burnie proved up to the task of knocking off the total finishing at 3-112, off 18 overs.
Jane Riley top scored with 30, April Brown made 23 and Mel Scolyer 22.
